Who is Jack????
Jack entered the restaurant business in 1958 working in the kitchen of Howard Johnson's in Lake George. He would continue to work for Carl DeSantis; and eventually his son Joe for 40 years. In that time he rose through the ranks and would go on to work in or manage Howard Johnson's in Lake George, Aviation Road, South Glens Falls, Buffalo, Oswego, and Utica.
In 1969 a change was coming for Jack; He would agree to be the first Manager for the newest dinnerhouse to open in the old Alfonso's building called the Red Coach Grill. He would continue there until the closing of the restaurant in 1999; which had been renamed, by that time, the Coachman Restaurant in 1989.
Jack would eventually spend a few years working in the foodservice department of Skidmore College in Saratoga before taking the ultimate plunge and opening Jack's American Bistro in June 2004.
